Here’s the sales team located in-house at Nicholas Meat, ready to serve and deliver quality beef products across the U.S.

Erik Prince
Before joining Nicholas Meat, Erik worked as a private consultant. On the job, Erik enjoys developing long-term business relationships and meeting new people.
When striving to be better or more efficient at his job, Erik said, “I knew this, but had forgotten its relevance when it comes to my job: The definition of success in sales is going from failure to success without the loss of enthusiasm.”
When not at work, he enjoys reading or doing something creative, like painting.
Katherine Velasquez
Prior to joining the sales team, Katherine, who has been with Nicholas Meat since 2022, worked in accounts payable and was also a purchasing superintendent. Through her work on the sales team, she has learned to both listen and learn from her customers.
“I’m not afraid to ask questions,” Katherine explained. “It gives me knowledge and helps build relationships with my customers.”
When not at work, she loves spending time with family and watching movies, as well as doing arts and crafts with her child.
Hunter Sevigny-Smith
Before venturing into sales, Hunter worked as a meat cutter and a meat room manager. Working in sales, he has helped develop brands and launch programs within the protein industry.
I really enjoy building relationships with my customers and navigating the hurdles that come our way together,” Hunter said. “I think it’s important to be yourself when it comes to sales and the rest will fall into place.”
In his free time, Hunter enjoys hunting and spending time exploring the great outdoors with his wife, family and dogs.
Mabel Rivera
Mabel, who has been with Nicholas Meat since 2022, served as a training superintendent before joining the sales team. Meeting other sales representatives and building business relationships are aspects of the job she enjoys.
“One of the most important things I have learned in my career is that building trustworthy and friendly relationships with customers makes a big difference,” Mabel explained. “They truly appreciate it, and it has helped me become more efficient and successful in my role.
When not at work, Mabel enjoys spending quality time with her family and friends, especially her children.
Christian Prince
Christian worked at a variety of beef companies before joining the Nicholas Meat sales team. In sales, he loves how the job is a puzzle with moving pieces: “The picture will never be perfect, but it’s super rewarding the closer you get.”
New to the cow side of the business, Christian is soaking up all the product knowledge he can. “There are many beef products that customers prefer over steer/graded products, which is not something I expected before coming to Nicholas Meat,” he explained. “I have learned to be proud and confident in our pricing and let our quality and reputation do the rest!
In his free time, Christian enjoys disc golf, skateboarding, rock concerts, and exploring his kids’ hobbies and interests.
Julie Hornung
Julie worked in sales for other beef packing companies before joining the Nicholas Meat sales team. Previously she focused on trimmings and boxed beef but strives to build relationships across the industry.
It’s important not to sell product but to solve problems, according to Julie. She prides herself in finding solutions for her customers that make sense for their operation while making sure to maximize value out of the carcass.
“When you understand what your customer really needs – whether that’s price stability, a consistent supply or help covering an item they’re short on – the sale usually takes care of itself,” she added.
Additionally, Julie loves the strategy behind moving the whole animal. “Anyone can sell a steak but figuring out how to place every cut and every trim efficiently is the real game.”
Julie enjoys spending time outdoors with her family – especially her three granddaughters – when not at work.
